Immunity boosters are correctly the most popular buzzwords in 2020. And rightly so. The Covid-19 situation is hardly getting over any time soon. Until the vaccine is ready, improved and robust immunity is our best bet. And a conversation that revolves around immunity boosting is incomplete without garlic.
So, presenting to you a quick and easy garlic onion soup. Healthy food need not always be bland.
Garlic-onion soup – serves 2
Ingredients:
- Onion – 2 (finely chopped) – medium-sized
- Garlic cloves – 10
- Salt, pepper, mixed herbs – to taste
- Fresh cream – 1/2 cup
Instructions:
- Heat 2 tbsp butter in a deep pan on medium heat (Alternatively, you can use olive oil, or any other oil of your choice too)
- Sauté the chopped onions and garlic in the pan for 2 minutes, until onions change colour slightly. (We do not have to brown the onions)
- Add about a glass of water, place the lid, and allow it to boil. After the first boil, you will notice the onions getting mushy and water turning white-ish.
- Take the pan off the flame. Allow the semi-cooked onions and garlic to cool and blend the whole thing into a fine paste. You need not add additional water at this stage.
- Once the paste is ready, heat the pan again on a medium flame. Add the paste to it and cook for 2 more minutes.
- Now add two glasses of water and let it boil. Continue boiling until the mixture thickens
- Boil further to adjust consistency. At this stage, add about a half cup of fresh cream, salt, pepper, mixed herbs (or simply oregano and some chilli flakes) as per your taste. Mix it well.
- Serve hot. Top it with bread croutons and garnish with onion greens.
